I love Laughing Cow Light, it is a fantastic replacement for mayonnaise; I put Laughing Cow on a slice of bread, then spead tuna fish on that, then top with slices of cucumber, a sprinkle of salt, and top with another slice of bread... The nice thing is, it's not that calorific, but packs a punch flavour-wise.

It's amazing what seemingly unnoticed foods can be used as replacements for other higher fat foods...it also helps me because I can't tolerate that much milk, so I get to enjoy a creamy tuna sandwich....they really are delicious. And I intend to try some of these other variants that people are posting here, maybe even add them to my cookbook.
