Can I Use Resistance tubes in Lieu of Chin Up Bar for Lats

I am wondering, in order to tone up and lean out, instead of bulking up the lats, should I be doing chin ups? I do not have a chin up bar but have the overdoor resistance bands/tubes - will these work similarly to the chin up bar?

I genetically have a broad back and shoulders (and at only 5'4") seem to have a "stocky" build naturally; therefore, I do not really wish to build size there to emphasize what I naturally have. I just have looseness and pooch(stubborn fat I suppose - hard to loose when you are menopausal and 55 years old)from under the arms from the breasts straight around to the lats and down to the waistline - this I would like to tone up - what should I target? I have minimal equipment consisting of the resistance tubes that go over/under the door, an exercise ball, several sizes of free weights and rebounder. I don't really want to purchase more equipment as I will be moving into a very small environment and space is very limited.

I also have another question about the shoulder and chest areas. As stated, I naturally have wide shoulders; have always had extremely small breasts. Now, given my age and hormonal challenges at this time of my life, the front chest and shoulders have "thinned out" and do not have the volume as they once had. I am getting a "gaunt" look. I read that the best exercise for the chest area, to define, is simple pushups. I would just like to be able to build the chest muscles to give maybe a little more bulk and definition there as my breasts are so small in thinking that this might eliminate a non-proportionate appearance. Any other suggestions other than pushups?

This is an excellent site - glad I found it; however, it is so hard to try to determine which and what types of routines one should do, when you simply do not have the knowledge that many years of experience will bring. Hiring a personal trainer, of course, is ideal; however out of reach financially for most of us. Thanks again for a wonderful site.
