Super Omlette

Three large whole eggs
Two spring onions, sliced
1/2 punnet cherry tomatoes, quartered
20g tasty cheese, diced into small cubes
Cracked black pepper
Tablespoon hot chilli sauce
Small tin tuna in springwater (also can use small tins of flavoured tuna, herb and garlic or tomato and onion work really well).

Preheat non-stick frypan on a medium heat. Beat eggs with an electric mixer until fluffy. Pour gently into frypan and do not stir.

Mix all other ingredients in a small bowl. When egg is cooked halfway through pour filling onto one side. Using a wide spatula, gently fold the egg over the filling. If you can, keep the edges clear of filling so you can seal it with the uncooked egg.

Cook for another minute or until cheese has melted and the filling is heated through. Once the sides have sealed you can flip the ommlette to heat more thoroughly.

Tranfer to a plate and enjoy. Good protein and nutrition! I don't know the exact nutritional values, but it's yummy.

I often cut it in half and keep half in the fridge for later as it is quite large. Also quite tasty cold. It's just hard to make a good ommlette with only two eggs.

The first time I read that I thought it said 1/2 a punnet of Cherries! He he he
That would be one crazy recipe. Not I have read it properly it sounds great I'l give it a try.
