Tomato and red pepper soup

If you're following weightwatchers, this is a zero point soup.

1 onion
3 tins chopped tomatoes
1 red pepper
salt, pepper and herbs to taste
about a pint of water or stock
Tabasco sauce (totally optional - essential for me!)

chop up the onion and pepper and fry in a bit of fry-light spray (or oil of your choice - oil will add WW points) until soft.

Add the tomatoes, water and seasoning, simmer for about 20 minutes them blend. Really easy and delicious.

How many people does it serve, I'm guessing not one, with a pint of water and 3 tins of tomatoes

I'd say it's ideal if you're not feeling well, or you just want a really light starter, but looking at the ingredients, I wouldn't say there would be a whole lot of calories in the entire recipe...so, I can't see me trying it anytime soon, but as a starter, or a very late night munchies thing, it might work...alternatively, it could work as a replacement for a drink when you fancy fluids but want something different.

I think they should do a heathy "Come dine with me" TV show. Because its easy to make a nice meal when you can just throw a load of butter and cream in.
Anyway this would be a perfect starter for a Healthy episode of come dine with me.

You could have it cold in really hot weather (not that we get much!)

Try adding red lentils, I think that flavour would work - mmmm, might try that one
