Quick and Easy Vegetable Soup

To busy to cook every day? I am. That’s why I love this recipe. I make a big batch at the beginning of the week and reheat for lunch or dinner.

Chop all vegetables roughly. Heat a large pot over low-medium heat, add olive oil and garlic. Add vegetables and cook for a few minutes before adding the tinned tomatoes and consume. Add the rest of the ingredients and cook until desired. Season with pepper (there is plenty of salt in the soup and stock) and parmesan cheese to taste.
